Sweet vegan crêpes
Crêpes are one of the most popular and easiest things to make. And they are very versatile: they can be filled with our favorite vegetables just as well as with a delicious chocolate spread, vegan condensed milk, vegan dulce de leche or our favorite jam, since they adapt perfectly to both savory and sweet fillings, with the only difference being whether we add salt or sugar when making them.
These sweet crêpes, moreover, contain neither dairy milk nor eggs, so they are much healthier, since we avoid the fat and harmful effects of milk and the cholesterol of eggs.
This way, we can enjoy a treat with fewer regrets for 3 reasons: we will be eating less fat, we will not feel so heavy and bloated, and we will be sure that no animal has suffered for its preparation.

- Step 1Mix all the ingredients in a bowl and beat with an electric mixer until the batter is smooth and lump-free. Cover it with plastic wrap and let it rest for half an hour in the fridge.
- Step 2Heat a non-stick frying pan and brush the bottom and sides with a few drops of oil.
- Step 3Pour a little batter (about one soup ladleful) into the center of the pan and tilt the pan so it spreads over the whole bottom.
- Step 4With the heat on medium, wait about 3 minutes and flip it so it cooks on the other side.
- Step 5Grease the pan again and pour in another ladleful of batter, and so on until it is all used up.
