Spicy black bean tacos
These tacos are a tasty dish, rich in high-quality protein and with an irresistible spicy kick.
Since black beans are the main ingredient, we get all the nutrients that legumes provide in a delicious way and, in addition, as they are wrapped in corn-based tortillas, a perfect combination of amino acids is created, resulting in a complete, high-quality protein free of cholesterol and harmful fats.
And if we want to make this dish even more exquisite, we can add a mild, slightly tangy touch by topping it with a little vegan sour cream, and serve it with a delicate guacamole.
These tacos are rich in protein, carbohydrates, fiber, flavonoids and antioxidants such as lycopene, beta-carotene, glutathione and terpenoids, inulin, allicin, alliin, gamma-aminobutyric acid (GABA), vitamins A, C, E, K and the B group (B1, B2, B3, B6 and B9 or folic acid), sulfur, calcium, phosphorus, iron, magnesium, manganese, potassium, selenium, sodium and, in smaller amounts, copper and zinc.

- Step 1Put the beans in a colander, rinse them under cold running water, drain them and set aside.
- Step 2Pour the oil into a skillet and heat it over medium heat. When the oil is warm, add the finely chopped onion and the garlic cut in half, and cook for 5 minutes until softened.
- Step 3Add the bell pepper cut into small pieces and the tomatoes cut lengthwise, stir, and cook everything for 5 more minutes.
- Step 4Add the crushed tomatoes, the salt, the spices, the seeded cayenne chili and the sugar (optional), stir everything well, and cook covered over low heat for 10 minutes.
- Step 5Add the drained beans, mix them with the sauce and cook everything for 5 more minutes so the beans absorb the flavor well, stirring from time to time. After this time, turn off the heat.
- Step 6When the filling is ready, take a couple of tablespoons, spoon them onto the still-warm corn tortillas, and fold them over to assemble the tacos. Repeat this step until all the tacos are assembled and, if you like, top them with a little vegan sour cream to bring out the flavor.
