Vegan cheesecake with berry topping
*Plus 2 and a half hours of chilling
Autumn is the best time to enjoy berries (also known as red fruits), and there is no better way to do it than with a delicious 100% plant-based cheesecake.
Since this cheesecake contains no ingredients of animal origin, it is much lighter than the traditional one and, in addition, it is cholesterol-free, because plant-based ingredients do not contain any.
As for its flavor, by turning the different berries into an appetizing, jam-like topping, its mild tartness highlights the sweetness of the body of the cake and also gives the cookie base it rests on an even more delicate flavor .
As for its appearance, since berries contain carotenoids and anthocyanins (the pigments that give these fruits their characteristic hue), they add an intense color that brings a lot of life to this dessert.
The berries used are a mix of blackberries, raspberries, blueberries, black currants, red currants and strawberries, so by adding them as a topping for the cheesecake, we eat fruits rich in fiber, antioxidants (especially polyphenols, carotenoids and anthocyanins), lecithin, polyphenols, flavonoids, vitamins A, C, E, K and B (B1, B2, B3, B5, B6, B7 and B9 or folic acid), calcium, phosphorus, iron, magnesium, potassium, zinc and copper.
On the other hand, since the body of the cake is made with tofu, which is very rich in protein and calcium and also contains lecithins, omega-3 fatty acids, vitamins E, K and B (B1, B2, B3, B5, B6, B7 and B9 or folic acid), phosphorus, magnesium and potassium, we will also benefit from all these nutrients.

Tap on the steps to mark them as done
- Step 1We crush the cookies until they are like flour and melt the margarine until liquid. Once melted, we put it together with the cookie crumbs in a 20 cm wide mold, mix well, and press down with our hands to flatten the mixture against the bottom of the mold, making sure it is even. Then we put it in the freezer for 30 minutes.
- Step 2We put in a wide bowl all the ingredients of the filling and beat them until you get a homogeneous mass. We take the mold out of the freezer and, making sure that the base is already hard, place the dough on it with the help of a spatula or a spoon (with the back) so that it is uniform and smooth.
- Step 3Preheat the oven to 175 °C for 15 minutes and bake the cake for another 35 minutes. After this time, remove the cake from the oven and let it cool.
- Step 4In a saucepan, put the fruits of the forest, sugar and water and heat over medium heat for 30 minutes, stirring occasionally so that it does not stick. After this time, we put out the fire and let it cool down.
- Step 5When it is warm, we beat it a little so that it is homogeneous, we throw it on the filling that we have in the mold and we spread with a tongue until getting a perfect coverage. We put it in the fridge for 1 hour and, when the jam has solidified, we serve it.
